Simple Pumpkin Smoothie

I know Thanksgiving is over, but I'm still holding on to a recipe I made around that holiday. I figured if I'm still hooked, its about time to share with all of you. This recipe is a little different- It's not great. (Ok, but keep reading) I'm not a huge fan of pumpkin, which could contribute to my less than stellar remarks about the flavor... Don't get me wrong, it's good, just not mind blowing. So why do I keep drinking it? It's tastes good enough, but makes you feel absolutely amazing all day! When I drink this orange goop for breakfast, I feel lighter, healthier, happier, and tend to eat healthier throughout the day to keep up the good feeling. 



The recipe was adapted from this one from Mind Body Green. They're recipe was a little too involved for me, so here's my simple version. And yes, I did just say a smoothie recipe was too much for me.

Pumpkin Smoothie:
-About a cup of pumpkin puree-
-cup-ish of unsweetened (vanilla) coconut milk-
-half a banana- 
-splash (about a tspn) of vanilla-
-generous dash (about a tspn) of pumpkin/apple pie spice*-
*cinnamon, nutmeg, clove, ginger
-----
This recipe makes one large smoothie. 
Add ice or refrigerate the pumpkin to make it cold, but it's good room temperature or even warm! 

I use vanilla coconut milk because it's what I usually have on hand. You can use any kind of milk. I always keep pumpkin puree in the house. It's great for stomach aches (in dogs too!) and makes your skin glow! Also, if you need a little extra sweetness, choose a banana with more spots (or even brown) or add a little agave, honey, or other natural sweetener.

  2. Thanks Rachelle! I actually changed my major, so I'll be applying to a 4+1 program and (hopefully) graduating with my masters in three years! Wow sounds like a long time...
